This pizza oven requires cooking by feel
The oven is not fitted with a thermometer, as the temperature can vary and depends on the environment, the type and amount of wood, and the size of the opening of the cloche.
With only a large fire in the middle of the cone, the oven gets very hot especially in the middle.
It is therefore best to heat the pizza oven with heat coming from the sides of the cone to create the best heat distribution.
