Shakshuka VUUR LAB. casserole dish

What you need (for 4 people)

1 tablespoon paprika
1 teaspoon coriander powder
Half a tablespoon of cumin powder
Half a teaspoon of cayenne pepper
1 pepper (red or orange), diced
1 large onion, chopped
2 cloves of garlic, finely chopped
4 eggs
1 bunch of coriander and/or flat parsley
1 can of chopped tomatoes
Vegetable stock cube
Possibly additional vegetables such as courgette, aubergine, leek, etc., dice and/or ring them
Baguette multigrain or other nice firm bread
(goat) feta cheese

How do you make this Shakshuka?

Heat a dash of oil in the wok or witch's boiler. In it, fry the onion and garlic until translucent. Then fry the pepper and extra vegetables as well. Add the dry herbs and fry briefly while stirring well to prevent the herbs from sticking. Deglaze with the can of tomatoes (and possibly a dash of white wine), add the stock cube and leave to simmer quietly for 15 minutes with the lid on the pan. If necessary, season with salt and pepper. If necessary, add a little water if it seems to be boiling dry. Make 4 wells in the sauce and break an egg into them. Spread the feta over the top and let it simmer for about 8 minutes with the lid on the pan. Garnish with the fresh herbs. Serve with a piece of bread, you can use it to 'dab up' the sauce from the pan!
