Delicious Seasonal Vegetables for Late Summer BBQ. Our pick for this late summer:
Vegetarian:
Corn: Juicy corn cobs are a must for any BBQ. Brush them with melted butter, sprinkle with salt and pepper, and grill until nicely golden brown. Serve with a touch of lime for extra freshness.
Bell peppers: Hollow out peppers and stuff them with a mixture of cooked quinoa, chopped tomatoes, onions, and herbs of your choice. Drizzle with olive oil and roast on the BBQ until the peppers are soft and the filling is crispy.
Courgette and aubergine: slice these vegetables, brush with olive oil and grill them briefly on both sides. Place them on a platter and drizzle with balsamic vinegar and fresh basil.
Tomato: Grilled tomatoes are a surprisingly delicious addition to your BBQ. Cut them in half, drizzle with olive oil, add some salt and pepper and grill them cut side down. Perfect as a side dish or as a base for a summer salad.
Onions and leeks: cut onions and leeks into thick slices, brush with oil and grill them until soft and lightly caramelised. Serve as a tasty side dish.
Carrots: these are plentiful at this time of year. Slice them into thin strips and marinate them with a mix of cumin, smokey paprika and a touch of honey. Roast them until crisp and caramelised - a deliciously sweet and spicy side dish.
Potatoes: these are always a favourite at a BBQ. Cut them into wedges, drizzle with olive oil and sprinkle with our Habibi Veggie Spice Mix. Grill them until crispy on the outside and soft on the inside. Serve with a creamy dip for the ultimate treat.
Fennel: slice the fennel, marinate with olive oil and lemon juice, and grill until they have a nice grill mark.
Beetroot: Wrap the beetroot in aluminium foil and let it cook nicely between the coals. After an hour, take them out and prick them with a fork to see if they are done. Only remove the skin when they are done. The beetroot becomes deliciously sweet and all the flavours are preserved!
Non-vegetarian:
Asparagus: While the asparagus season is nearing its end, you can still enjoy this crunchy vegetable on the BBQ. Wrap thin asparagus in slices of bacon and grill until the bacon is crispy.
