Tzatziki dip mix

Excess or crooked vegetables used to be thrown away.
Now they are dried, often as early as the farmer or grower. The Man With The Pan uses these dried vegetables to make his mixes taste even better.
Like the herbs and spices, they are very finely ground and mixed with a pinch of sea salt. This creates a full-bodied, 100% natural mix for a delicious tzatziki.

1 cucumber and 400g Greek or Turkish yoghurt (10% fat).

Peel the cucumber and grate it with a coarse grater.
Put the grated cucumber in a colander and squeeze very well.
You will now be left with about 200 grams of cucumber.
Put the yoghurt in a bowl.
Stir in the spice mix.
Add the cucumber and stir well again.
Put in the fridge for an hour to allow the flavours to dissolve properly.
Got leftover tzatziki? Use it on a burger bun the next day instead of mayonnaise.
